

** KEN’S STRAWBERRY/RHUBARB COBBLER RECIPE
INGREDIENTS
6 cups sliced rhubarb, about a pound and a half.
½ cup granulated sugar.
1 3 oz package strawberry gelatin.
1 9 oz package yellow cake mix (like Jiffy).
1/3 cup unsalted butter, melted.
2 tsp confectioners’ sugar for garnish.
Whipped topping such as Cool Whip optional. I would personally use vanilla ice cream.
DIRECTIONS:
1. Use baking pan, 11 X 7 X 2. Coat with nonstick spray such as Pam.
2. Place rhubarb in the prepared baking pan.
3. Sprinkle with granulated sugar and strawberry gelatin.
When we think of grilling, sometimes we tend to forget about the side dishes and
salads that also make a great summertime meal.
This month we will provide some ideas for healthy and delicious sides and salads,
prepared in a variety of ways. We encourage our audience to bring your favorite salad
or side dish recipes to the program.
Maybe a dessert or two as well whether we need it or not!
Time permitting, we may even discuss some of the exhibits we put our hands on at
the recent ACB national convention held last week in a place almost as hot as well!

The following products will be featured: Toaster oven , Contact Grill, Nordicware
Breakfast Set (featuring omelet maker, egg boiler, and sandwich maker).
Ideas such as cold sandwich, salad plates and fruit plates featuring a favorite dressing
or brand.
We will encourage audience participation in order to make this even fun show more
enjoyable to the ear as well as the palate.

"Cooking with Ken and Cindy" will present a special cooking program on barbecuing and grilling as we prepare for Memorial Day and the entire summer. We will be presenting some interesting guests to discuss outdoor cooking, types of outdoor equipment to use outdoors, charcoal versus gas cooking, and methods for making your BBQ tasty and pleasurable. For some of you who are unable to cook outside, we will discuss grilling on indoor grills such as the George Foreman grill.
On April 25, 2010, at 4 p.m. Pacific Daylight time, Cooking with Ken and Cindy will
discuss various methods of shopping for the kitchen and the home in general. We will
discuss some of the on-line shopping available to assist persons who are blind or
visually impaired, how to access assistance from a store, how to select meats and
produce, what types of questions to ask while shopping in person, etc. We will also
welcome shopping tips and web sites that some of our audience uses to make shopping
that much easier.

On March 28, 2010, we will be fortunate to have as our guest Judy Burch, Rehabilitation Teacher from the Missouri Rehabilitation Services for the Blind. Some of the topics we hope to cover may include: chopping techniques, slicing methods, effective ways to peel fruits and vegetables, browning ground meat or poultry, turning items in a skillet, making pancakes, and separating an egg.
This will be a program for novice and advanced cooks alike!

The other day on Accessible World, many of you heard from Al Gil regarding the ease
of gambling while blind. Well, on our next program, Al’s daughter and son-in-law,
Mary Beth and Tom Randall will appear live to discuss their pleasure with the New
Wave Oven. We have previously mentioned both the new wave and the Flavor Wave counter
ovens, but this time you will hear how easy the New Wave Oven works, and the satisfaction
that Mary Beth and Tom Randall have enjoyed from it over the past two to three years.
This show will have a special guest who will provide tons of information pertaining
to easy recipes of five items or less, using items usually found in your kitchen,
or easily obtainable in your local grocery, and much more.
Our guest is Linda Larson, who writes a column twice a week called Busy Cooks for

Linda is also a cookbook author.
We will be focusing on three topics: cooking on a budget; slow cooker recipes and
5-ingredient ideas.

However, to do this we would like to have as many of you on line with us in the Accessible Kitchen Conference Room as we talk turkey. We’ll also talk ham and perhaps prime rib.
